The coffee comes from the Daterra Farm in Cerrado, Brazil. The “Daterra – sustainable coffee” farm is located near the town of Patrocínio. Since our first trip to Brazil in 2018, we have had a long-standing friendship with Daterra. Among other things, we source the green coffee for our Cerrado coffee from the farm. Daterra is an extremely innovative farm that has been researching innovative, sustainable cultivation concepts together with universities for many years and has already received numerous awards for its work. One of their projects involves the development of Arabica coffee varieties with a naturally low caffeine content. Our Lovebirds is a “natural low caf variety” and has a naturally low caffeine content (0.7-0.9%) compared to standard Arabica coffees (1.2-1.5%).
The special thing about Lovebirds coffee is the way the coffee cherries are processed after harvesting. The cherries are stored in a large steel tank for 120 hours in the absence of oxygen, so that the cherries ferment “anaerobically” during this time. They are then dried. The anaerobic preliminary stage results in a very full and creamy mouthfeel and the flavor attributes are intensified, making the coffee even more complex. Due to the high additional effort involved in the “anaerobic” fermentation, there is only a very small quantity of this coffee in total, just under 400 kg, so that we can more accurately describe this coffee as a “nano-lot” rather than a “micro-lot”. If you want to taste the change in flavor of the coffee due to the anaerobic preliminary stage, you should try the Aramosa Low Caf alongside this coffee, which was not fermented anaerobically for 120 hours.
